2013 Rosé Ciel de Cheval, Red Mountain
We wanted to create a substantial Rose with great flavors and big mouthfeel. A complex wine that would pair well with a wide range of foods and spices. The type of wine you want to sip while in the kitchen cooking. To make that wine we combined Grenache (60%) and Mourvédre (40%). Together they were whole cluster pressed to reduce bitterness. The juice was then placed in neutral oak barrels and fermented until dry with a specially selected yeast known to produce enhanced mouth feel. The wine was allowed to age for four months in the barrel. The individual barrel lots were then selected and blended together to produce the final wine.
This unique rosé is a wonderful example of what happens when a good wine is given time to mature. Aromas of honey, apricot, & caramel deceive the pallette into expecting sweetness while delivering a broad-bodied burst of stone fruit, berries, and just a hint of nuttiness and salinity that culminates in a clean, definite finish.
