2012 Cabernet Sauvignon Ciel du Cheval, Red Mountain


This Cabernet Sauvignon was made in a very simple straight forward manner. A single clone of Cabernet Sauvignon was used: UCD 8. Most of the state's great Cabernet's are made from this clone. Indeed most of the Cabernet grown in Washington is the UCD 8 clone. Two-thirds of the wine was fermented in open top fermenters. The remaining one-third of the wine was fermented in an oak roller fermenter. The wine was then placed in 100% New French Oak and allowed to age for 22 months. This produced a wine with all of the trademarks of Ciel du Cheval -- big fruit flavors balanced by oak, fine yet intense tannins that give a big mouthfeel and a long finish.

Aromas of berries, plums, cassis, violets and earth jump from the glass, followed by a hint of spices. Smooth and easy to drink, the palate has fine and intense tannins that are gentle and fill the mouth. Yet the structure is huge and provides for a long lingering finish. This pure varietal wine showcases rich, ripe cherry pie fruit backed up against a mineral-soaked base. Baking spice highlights and a streak of caramel reflect aging in 100% new French oak. Acids and tannins are proportionate and substantial.

Bright, dark ruby-red. Aromas of cassis, plum, raspberry, flowers and sexy spices, with a hint of crystallized fruits. Sappy, pliant and deep, more red fruits than black, with complicating spice and mineral qualities. Finishes youthful and very long, with firm but essentially gentle tannins. A rock-solid wine for aging.
